Serving breakfast and dinner in an upscale, yet welcoming, atmosphere, Core Kitchen & Wine Bar at The Ritz-Carlton, Dove Mountain bills its menu as true American cuisine with coast-to-coast American favorites. The menu is seasonal, changing monthly and focusing on regional and sustainable cuisine and local growers. A 42-tree citrus orchard adjoins Core, offering the freshest Arizona oranges, Minneola tangelos and red grapefruit. For breakfast, you’ll find traditional offerings — eggs Benedict, steel-cut oatmeal, pancakes, continental and American breakfast, seasonal fruit, waffles and the like — alongside Southwestern specialties like chilaquiles, huevos rancheros and even braised short ribs and potato hash. At dinner, begin with the Chef’s Specialty Board featuring artisanal cheeses and cured meats or unique starters like the Iberico Secreto (pork skirt steak with piccalilli vinaigrette) or Pomegranate Spinach salad. Seafood is flown in fresh for your enjoyment, and the menu also includes a tantalizing selection of the finest cuts of meat prepared with fresh, seasonal ingredients. Of course, the wine selection at Core is exemplary, with more than 2,800 bottles of wine available. Every Friday night, the restaurant sommelier will take you on a journey through the world’s most notable wine regions. You’ll sample three different wines with tasting notes and food pairings, along with complimentary charcuterie. Private events and Chef’s Table culinary experiences are also available.
